Avocado Mousse and Tomato Sorbet

4 servings :

Mousse :

[themify_icon icon=”fa-circle” icon_color=”#ff70cf”] Cut the avocado and scoop the flesh into a blender.

[themify_icon icon=”fa-circle” icon_color=”#ff70cf”] Add the lemon juice, the 2 greek yogurts and the mint to the avocado mixture. Mix them together. Season well with salt and pepper.

[themify_icon icon=”fa-circle” icon_color=”#ff70cf”] Transfer the mixture into 4 bowls.

[themify_icon icon=”fa-circle” icon_color=”#ff70cf”] Cover with plastic wrap and refrigerate.

Sorbet :

[themify_icon icon=”fa-circle” icon_color=”#ff70cf”] Place your tomatoes into the boiling water for 30 seconds. Skin them and cut the flesh into cubes. Mix them.

[themify_icon icon=”fa-circle” icon_color=”#ff70cf”] Blend tomatoes with sugar, salt, pepper and lemon juice in a blender until smooth.

[themify_icon icon=”fa-circle” icon_color=”#ff70cf”] Pour the mixture into a large bowl. Store in freezer for 2 hours.

You can add few mint leaves to decorate your delicious sorbet.
